Open Hearth Cooking and Brick Oven Baking

Paula Marcoux Hearth Cooking

Paula Marcoux, food historian and author of “Cooking with Fire” (Storey Publishing, 2014), will be returning to ifarm LLC this winter, February 11, 2018, to continue our exploration into 19th-century specialities of the New England winter kitchen.

Ms Marcoux will guide a small group of eight participants in the preparation of a delicious sit-down meal utilizing a hearth, brick oven, and wood burning stove. In particular, she will cover how to unlock tastes that only a relationship with open fire can bring out, the flavors produced by exposure to red-hot coals or to the mellow heat retained in masonry. Everyone will receive hands-on experience. (Veterans of our 2017 class, please note: the 2018 menu will include new dishes, recipes, and concepts, along with perhaps a previous favorite or two.)

ifarm LLC is a restored, 19th-century farmstead located in Boxford, MA. The property has been recognized by the Massachusetts Historical Commission (MHC) as a National Historic Place and recipient, in 2016, of an MHC Preservation Award. Tickets for this workshop are available online at
